Owner, John Tinios and his late father Mike Tinios, a Greek immigrant with close ties to the island of Tinos, shared dreams of opening a restaurant reflective of their roots. Tinos, a gastronomic destination with steadfast hospitality, inspired the creative flavorful food and culture that is Tinos Kitchen + Bar.

Jillian Mansfield

GENERAL MANAGER + BEVERAGE DIRECTOR
Jillian has more than 20 years of experience in the hospitality industry and has held senior management positions with Tinios Pro Hospitality for the past 8 years. 

Jillian’s career in hospitality began in 2000, working her first job as a Busser for the Tinios family at The Galley Hatch. 

Prior to returning to Tinios Pro Hospitality in 2007, Jillian discovered a passion for fine dining while working as a Server at The Breakers Hotel in Palm Beach, Florida. Inspired by training sessions offered by the hotel’s Master Sommelier, she has continued to nurture her wine knowledge.

 
Jill who is the hostess greeted us and made all feel comfortable and she remembered the wine we love and put it in the wine cooler. Two of us had the Yellow Fin Tuna and this dish was AMAZING. The Pork Chop was also a Super Star dish and the Lamb Shank was superb. The Chef GJ is in our opinion the best in the Northeast!!!! Great meal with four friends. This place rocks!

EXECUTIVE CHEF
Now a European Trained Chef, a young Gert-jan (GJ) Overmars at, sixteen years old, was washing dishes at a Chinese restaurant in Holland- completely unsure of his professional direction. Two years of hospitality study and three years of Culinary focused work-study later, Chef spent the majority of his twenties securing Head Chef positions, opening French Bistros across the Netherlands, learning, practicing and fine-tuning his culinary craft.
